Every so often the team posts a straight checklist of what came out of the oven that day. This one ran seven items long: panderosa bread, cheese pandesal, original ensaymada, ube cheese rolls, ube Spanish rolls, pande ube and sausage rolls.
If you have not met them before, the yellow cards in the display case do the explaining. Cheese pandesal is a classic Filipino plain bun rolled in milky cheese crumbs. Spanish bread is a soft, rich sweet bread roll filled with special butter cream and rolled in bread crumbs. The original ensaymada is a Filipino sweet dough based bun frosted with margarine and topped with grated cheese; the ube version swaps that for purple yam cream and ube crumbs.
Nearly every card carries the same instruction at the bottom: best served warm. Fifteen to twenty seconds in the microwave would do it.
